Ingredients

Here is a quick overview of the simple ingredients needed to make an epic Super Easy Bruschetta! The printable recipe card at the bottom of the post includes specific measurements and step-by-step instructions.

  • Fresh Basil Leaves
  • Roma Tomatoes
  • Fresh Baguette
  • Extra-Virgin Olive Oil
  • Balsamic Glaze
  • Salt and pepper to taste

Optional: Garnish with mozzarella or pecorino Romano flakes across the top if you want some cheese.

Equipment Needed

Preparation and Storage

Make Ahead: You can prepare the basil and tomato mixture topping up to two days beforehand. Be sure to toast the bread slices immediately before serving so everyone has crispy baguette slices.

Bread gets soggy when any ingredient with moisture stays on it for too long, which we’re sure no one would be excited about.

Storage: Store leftover bruschetta topping in the fridge for freshness in an airtight container, and enjoy it within two days.

Freezing/How to Freeze: While it is safe to freeze bread, we don’t recommend freezing the topping, as it contains fresh ingredients, and freezing and thawing can alter their texture.

Recipe Variations

Substitutions:

You can use any balsamic glaze you like! We use this delicious Roland Balsamic Glaze from Italy.

Cherry Tomatoes or heirloom tomatoes work great for this recipe.

Cheese - Add in fresh mozzarella cheese, feta cheese, ricotta cheese if desired.

Additional seasoning - Thyme, oregano, black pepper

We have a sweet-savory Strawberry Bruschetta featuring strawberries, mint, and mascarpone cheese if you want a fun twist on this classic Italian appetizer!

Vegetarian + Vegan Option: The ingredients in this recipe are typically 100 percent plant-based, even down to the baguette! Always check the ingredient list to be sure, as some balsamic glazes may use honey as a sweetener.

Gluten-Free: Use a gluten-free baguette and balsamic glaze to make this recipe gluten-free.

Smaller Serving Size + Larger Group/More Servings: The written recipe uses one French baguette to make 24 servings. Scale it up or down to your desired yield.

Make it Spicy: Mix diced jalapeño peppers or red chili pepper flakes into the bruschetta topping to add a fiery kick!

Sugar-Free: The sugar content in this recipe depends on whether your balsamic glaze contains sugar, as some brands add sweeteners for flavor. Use a sugar-free balsamic glaze to make it sugar-free.

Stale bread was grilled over hot coals, rubbed with homegrown garlic, drizzled with extra virgin olive oil and topped with straight-from-the-vine tomatoes. Today Italians still enjoy toasted bread, chopped tomatoes, garlic (or garlic-infused olive oil), and olive oil as a go-to snack.

Why does my bruschetta taste bitter? ›

If your bruschetta is bitter, it is probably your olive oil. Extra virgin olive oil varies in pungency and bitterness. Try trying other brands to see if you can find something a little more pleasant for you!

What are the best tomatoes for bruschetta? ›

Tomatoes – I like to use cherry or grape tomatoes for the bruschetta because they're easier to cut and aren't as watery and fleshy, but feel free to use Roma tomatoes or whatever is ripe in your garden!

Should bruschetta be refrigerated? ›

But don't let it sit at room temperature for more than 30 minutes. Bruschetta is one of those things that can last in the fridge as long as the tomatoes stay good. Eventually the vinegar will break down the tomatoes and turn kind of mushy. Just keep it STORED in the fridge in an airtight container.

Why is my bruschetta soggy? ›

Too Much Topping or Dressing: Overloading the bread with too much tomato mixture or dressing can make it soggy. It's important to use a moderate amount of topping and to drain your tomatoes well if they're particularly juicy.

Should I deseed tomatoes for bruschetta? ›

Tomato skins and seeds can be bitter, and removing them improves the flavor and texture of your bruschetta topping. Seeds and skin also contain extra water, which can make your bruschetta runny and your toast points soggy.

How long is homemade bruschetta good for? ›

Really you should try to only make as much as you can eat in one night, as this bruschetta does not store very well. If you really need to store some leftovers, place the tomato mixture in an airtight container, and keep in the refrigerator. The mixture will keep for about 2-3 days but is best eaten fresh.

What takes bitterness out of tomato sauce? ›

Add Some Baking Soda

If your tomato sauce is too acidic and verging on bitter, turn to baking soda, not sugar. Yes, sugar might make the sauce taste better, but good old baking soda is an alkaline that will help balance the excess acid. A little pinch should do the trick.

What do you eat with bruschetta? ›

Salads: A light, leafy green salad with a simple vinaigrette pairs well with bruschetta. It helps cleanse the palate and complements the fresh flavors. Soup: A creamy soup like tomato basil or a clear broth-based soup can serve as a wonderful precursor to a heavier main course.

What tomatoes do Italians use? ›

San Marzano: Perhaps one of the best known varieties, the San Marzano tomato is a DOP-certified plum tomato, thin and pointed, which is grown near Napoli. Its bittersweet taste – making it perfectly suited to a variety of dishes – is beloved across the world.

What is a substitute for balsamic vinegar in bruschetta? ›

I use red wine vinegar because I don't find it as harsh as balsamic. It provides great flavor but doesn't take away from the stars which are the bread, tomatoes, and basil. This is how you make non-balsamic bruschetta.

Why can't you refrigerate Roma tomatoes? ›

The standard rule is to keep tomatoes out of the refrigerator. It all comes down to science: Tomatoes contain an enzyme that reacts to cold temperatures, causing the cell membranes to break down and leaving you with a piece of fruit that's mushy and mealy.
