The warm Jamaican Jerk spices add layers of flavor but are not overly spicy.

Weight Watchers Zero Point Jerk Chicken Soup

This low calorie Weight Watchers soup is absolutely bursting with flavor. With zero points, you can enjoy this soup guilt-free. Make it with your Instant Pot pressure cooker or on the stove top.

Ingredients

  • 1/2 tsp ground all spice
  • 1/4 tsp ground cayenne (red) pepper (leave out for less spicy)
  • 1/2 tsp ground ginger
  • 1/2 tsp cracked black pepper
  • 2 tsp. minced garlic or 1 tsp garlic powder
  • 1 tsp salt
  • 2 lbs. chicken breast cut into chunks, skinless
  • 1 onion chopped, large
  • 1 diced green chilies canned
  • 2 fire roasted tomatoes canned
  • 2 black beans canned, drained and rinsed
  • 6 cups fat-free chicken broth
  • 2 limes- juiced
  • 2 tbsp. of cilantro

Instructions

  • In a small bowl add all the spices – cayenne pepper, ginger, garlic, salt, red pepper flakes, and pepper and mix the spices together.

  • Prepare chicken pieces and place them in a large ziploc bag.

  • Add spices to the chicken and shake to coat.

  • Place in refrigerator for 2 hours.

  • Instant Pot instructions: Add the seasoned chicken, garlic, onion, tomatoes, black beans, lime juice, and chicken broth to the Instant Pot.

  • Stir to combine.

  • Place lid on the Instant Pot and close.

  • Close the vent on your Instant Pot to seal.

  • Set Instant Pot to manual for 15 minutes.

  • When pot beeps, allow Instant Pot do a natural release.

  • Stove Top instructions: Place all ingredients in soup pot. Simmer on stove for 30 minutes, stirring occasionally.

  • Garnish with fresh chopped cilantro.

  • ENJOY!!

This soup makes 4 servings and each serving is Zero Points. Each serving is 1/4 of the recipe and about 2 cups.
