One of my favorite things about the Christmas season is having special traditions with my family. We have started quite a few traditions over the years including:

  • Setting up our Christmas tree while watching Christmas movies and drinking hot chocolate
  • Driving around our neighborhood to see all of the pretty Christmas lights
  • Spending a full day baking lots and lots of cookies, like these Christmas sugar cookies and these peanut butter oatmeal chocolate chip cookies
  • Reading the Christmas story from the Bible Christmas Eve before my kids go to bed
  • Giving a new ornament to each of our kids and each other each Christmas
  • Making this hot chocolate pancakes recipe on Christmas morning for breakfast

Why We Started Having Hot Chocolate Pancakes for Christmas Breakfast

A few years ago we decided we weren’t going to travel all around to see family on Christmas day. Once my husband and I had children, we started realizing how tough that was, especially when we started having more and more children.

In the past, we would hurriedly open presents, then get ready and head to my in-laws’ for the rest of the day where we’d also exchange gifts and then enjoy Christmas dinner together.

Don’t get me wrong, it’s always been a lovely time with family, but Orin and I felt bad for the kids. They had just gotten all these new toys that they wanted to play with and enjoy but we’d have to pack up and leave before they ever had the chance. By the time we would get home on Christmas day it would be late and time for bed.

So now, we host Christmas dinner at our house! The kids can open their gifts and then enjoy playing while Orin and I fix dinner for our family and extended family.

Once we started staying home all day on Christmas, I wanted to add a new tradition to our Christmas morning. After a little brainstorming, I thought of the perfect thing — hot chocolate pancakes for breakfast! My kids just love hot cocoa and pancakes, so I thought this would be the perfect combination for them!

These Swiss Miss pancakes are super easy to fix too which is great since I need to start prepping for Christmas dinner right after breakfast. With a little bit of trial and error, I came up with this delicious recipe for hot chocolate pancakes that I wanted to share with you today!

Hot Chocolate Pancakes Recipe - A Christmas Morning Tradition!

Yield: 8-10 large pancakes

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

A delicious, easy breakfast recipe for hot chocolate pancakes that's perfect to fix on special occasions, like Christmas morning or the morning of a big snowstorm!

Ingredients

  • 1 1/2 cups of flour
  • 5 packets of Swiss Miss
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons vegetable oil

Instructions

    1. Preheat griddle or frying pan on low heat. I find that heat level 2 or 3 works best for my stove, but you’ll need to see what works best for yours.
    2. Mix all of the dry ingredients together. (flour, Swiss Miss, baking powder, baking soda, salt)
    3. Use a whisk to blend together the milk, eggs, vanilla, and oil
    4. Whisk dry and wet ingredients together.
    5. For an extra special treat, you can add some whipped cream topping to these pancakes!

Serve these pancakes with a big glass of milk or even some hot chocolate!

If you want to kick it up a notch, you can also create reindeer with these pancakes. It should be fairly easy to do. Just add two pieces of bacon to the top for antlers and then use whipped cream to create eyes and a red cherry for a nose!
