Why I Love Leftover Chicken Breast Recipes

On almost a daily basis, I get requests for more chicken recipes! I know we all love our chicken meat and that we often have some cooked chicken sitting in our fridge. So, I decided it was time to compile an amazing list of easy leftover chicken recipes as a great all-in-one resource! We all have enough food waste going on in our kitchens and with crazy high food prices, it’s time to use every bit of that leftover chicken!

In fact, my first cookbook was based on the whole concept of cooking 5 pounds of chicken at the beginning of the week, then transforming it into a different dinner every night. It’s such a time-saving method for cooking dinner and chicken is always a kid-friendly protein option.

Leftover chicken breast recipes are a bit of my specialty! It’s how I’ve been cooking for my big family for a very long time. Basically over on Instagram and TikTok, I’m well known for being a chicken master so let’s get the leftover chicken ideas rolling!

How to Make Leftover Chicken Breast Recipes

Almost all chicken recipes can be transformed into leftover chicken breast recipes if you know a few basic steps.

Time needed:10 minutes

How to Make Leftover Chicken Breast Recipes

  1. Chop up the leftover chicken in bite-sized pieces.

Doing this before the chicken goes into an airtight container in the fridge allows the chicken to be ready-to-go for any recipe you use it in.

  2. Keep the leftover chicken safe in the fridge or freezer.

Chicken can be kept in an airtight container in the fridge for 5 days, or in the freezer for three months.

  3. Determine the best time to add the chicken to the recipe

Since the leftover chicken is already cooked, it is important to keep it from drying out as you use it in these recipes. Ideally, try adding it at the end of the recipe, giving it time to reheat without going too far.

FAQs About Leftover Chicken Breast Recipes

How long is leftover chicken breast good for in the fridge?

Cooked chicken that is stored in an airtight container inside the fridge can be used for 5 days. The fridge doesn’t eliminate bacteria from growing on your leftover chicken, it just slows its growth. Some chicken might still be good after 5 days, but use it at your own risk. If you will need it later than that timeline, store it in the freezer for up to three months instead.

What can I do with overcooked chicken breast?

If your chicken breast got overcooked, there isn’t anything you can do to make it more tender or moist. However, that doesn’t mean you have to throw it away, especially with grocery prices so crazy high right now.

Instead of throwing it away, try these two steps to use the overcooked chicken. First, chop up the chicken breast until it is very small. You can do this with a sharp chef’s knife or by pulsing it in a food processor. You will do this because overcooked chicken is tough. Chopping it small will allow much of that toughness to not be as noticeable.

Second, use the chicken in a recipe that is naturally moist, like a soup or enchiladas. Since your overcooked chicken is dry, adding moisture with a sauce or broth will help hide that unwanted characteristic.

Can I use dark meat in these leftover chicken breast recipes?

Yes, all of these 33 leftover chicken breast recipes can easily be made with either thigh or drumstick meat. In fact, dark meat has a lot more flavor than the white breast meat so you will end up with even better results. However, I know a lot of kids that would revolt if their chicken wasn’t the white breast meat so use with caution 🙂

How to keep chicken from getting overcooked in leftover chicken breast recipes

Since the leftover chicken is already cooked, it is important to keep it from overcooking as you use it in these recipes. Ideally, you should try adding it at the end of the recipe, giving it time to reheat without going too far. For example, if you are making a chicken soup or stew, you will prepare the recipe as written but hold off on adding the cooked chicken until the last few minutes. Once the chicken has heated through, remove it from the heat and serve.

What if the recipe doesn’t call for chicken that is already cooked?

For the most part, in any recipe that calls for raw chicken, leftover chicken breasts can be substituted instead. As mentioned above, it is best to add the cooked chicken just long enough for it to be warmed through. For example, if you are making a chicken and vegetable stir fry, cook the vegetables and sauce in the pan first. Finally, add the diced chicken breasts to the pan in the last 3-4 minutes of stir-frying.

Tips For Using Leftover Chicken Breasts Recipes

Before we jump into the 33 leftover chicken breast recipes, it’s important to know the following tips for success for the different ways you can use the cooked protein.

  • Leftover chicken can be kept in an airtight container in the fridge for 5 days, or in the freezer for three months. Be sure to keep yourself safe by not using cooked chicken that might have gone bad.
  • Since the chicken is fully cooked already, be cautious in how you use it in a recipe so that it doesn’t get overcooked and tough. A good rule of thumb is to add it towards the end to reheat it when possible.
  • While chicken breasts are the white meat portion of the bird, any of these recipes is also a great way to use up the leftover thigh or drumstick meat as well. Substitute them directly one for one in any of the recipes below.
