15+ Best Vegan Ice Cream Recipes (1)

With warm weather underway, I’m so excited to share the best vegan and dairy-free ice cream recipes, plus popsicles, soft serve, and sorbet.

When I first stopped eating dairy more than a decade ago, I was pretty worried that I would never be able to enjoy a frozen ice cream dessert again. Then, I took a vegan ice cream course at my local library and I’ve never looked back.

Turns out, it’s not that hard to make your own dairy-free ice cream using ingredients like coconut milk, coconut cream, maple syrup, vanilla extract, oat milk, cashew milk, coconut sugar, frozen bananas, chocolate chips, dark chocolate, cookie dough, soy milk, and other dairy-free alternatives. I even have a Vegan Fudgesicle recipe included in this round-up that is made using cashews!

So, with everything from chocolate and strawberry to fancy vegan ice cream desserts, there is literally something for everyone in this homemade dairy-free ice cream recipe round-up. Try getting creative and serving your ice cream with a topping like Blueberry Sauce.

I can’t think of anything better on a hot summer day than a dairy-free and creamy ice cream using simple ingredients. You can also use these recipes in a Banana Split!

Tips

  • You don’t even need an ice cream maker or ice cream machine to make homemade ice cream. Instead, you can use the freezer method with a food processor or blender as I’ve detailed in this post on how to make ice cream without an ice cream maker. This is also known as the no churn method which means you have to stir the mixture occasionally as it freezes to prevent too many ice crystals from forming.
  • However, if you prefer to use a machine to churn your ice cream mixture, then the ice cream maker that I use is this Cuisinart frozen yogurt-ice cream model that sells for less than $70 on Amazon. I’ve probably used my Cuisinart ice cream maker at least a hundred times.
  • Feel free to get creative, experiment with different flavors, and enjoy the results. Don’t miss these yummy gluten-free waffle cones either.

FAQs

Your recipes call for full-fat coconut milk. Can I use light coconut milk instead?

Yes, but the fat in the full fat coconut milk (for the recipes to make coconut ice cream) is what adds mouthfeel and that creamy texture that is reminiscent of dairy ice cream. If you use lower-fat versions for your ice cream base, then it your ice cream will be less creamy (but the good news is that it will still work).

For the best creamy vegan ice cream, be sure to use full-fat canned coconut milk and follow the ingredients in the recipe card for each recipe.

Can I use plant-based milks like almond milk or oat milk to make dairy-free ice cream?

Yes, but the result will be more like ice milk than ice cream. You would ideally use a plant-based milk like full-fat canned coconut milk to get the right texture. If you don’t like coconut milk, you could also use blended cashews instead (see my recipe for Vegan Fudgesicles below that uses blended cashews).

How long does homemade vegan ice cream keep in the freezer?

Homemade vegan ice cream does not freeze well long-term. It will freeze very hard. If that happens, just let it sit on the countertop for a few minutes (or up to 10 minutes) to warm up and soften. Then scoop your nice cream and serve as usual.

What are the best vegan substitutes for cream and milk in ice cream?

Vegan ice cream can be made with a variety of plant-based milks, such as almond, soy, oat, or rice milk. However, full-fat coconut milk is often the best substitute for cream because of its rich and creamy texture. You can also use cashews or avocados to give a creamy texture to your ice cream.

How can I make my vegan ice cream creamy and not icy?

The creaminess of vegan ice cream is often achieved by the use of high-fat ingredients, like full-fat coconut milk or soaked and blended cashews. Using a bit of alcohol, like vodka or a flavored liqueur, can also help since alcohol doesn’t freeze and it can help keep your ice cream from getting icy.

Now, onto the recipes! I hope you love these delicious ice cream recipes as much as I do.

FAQs

What vegan milk makes the best ice cream? ›

Kaminsky says that you'll get the best results from dairy-free counterparts that are higher in fat such as canned coconut milk. She typically uses almond milk as her base, but other non-dairy milks can work (steer clear of rice milk because it tends to be too watery).

What is the best oil for vegan ice cream? ›

Vegan ice cream recipes often rely on coconut milk, coconut oil (you can opt for refined coconut oil, which has less coconut flavor), or blended nuts to achieve a creamy texture.

What replaces dairy in vegan ice cream? ›

The secret is nothing more than coconut milk. Full-fat, creamy coconut milk. Other vegan milk substitutes, like almond milk or soy milk, just don't cut it when it comes to ice cream.

How do you thicken vegan ice cream? ›

Plant-based fats are the best way to thicken vegan ice cream. Coconut cream, full-fat coconut milk and coconut oil will give the creamiest and thickest results. Cornstarch and tapioca starch can also be used to thicken but the end result will be a little more icy and a little less creamy.

Which vegan milk tastes closest to real milk? ›

The test made a few things clear: soy milk, at its best, tastes closest to cow's milk. Oat tastes like a sweetly nutty cereal milk while almond tastes like the water left in your sink after washing the breakfast dishes.

Is oat milk or almond milk better for ice cream? ›

Among plant-based milk options, oat milk is among the creamiest. This makes it a great choice for adding to coffee and, in our case, making ice cream. (We're working on an oat based coffee product by the way!)

What emulsifiers are in vegan ice cream? ›

A common - and better - emulsifier for ice cream is soy lecithin, which can be derived from soybeans, sunflowers and rapeseed. Soy lecithin has a neutral taste, and also allows you to make egg-less ice cream.

What can I use instead of heavy cream for ice cream vegan? ›

Coconut cream is a versatile ingredient that makes an excellent vegan substitute for heavy cream. While it can be purchased pre-made, it's also simple to make at home using coconut milk. Simply chill a can of full-fat coconut milk in the fridge overnight, open it and pour the liquid contents into another container.

Why is my vegan ice cream icy? ›

My ice cream is icy. This is probably the most common problem with home made ice cream. And it's caused by large ice crystals forming in the mixture as it freezes. Large ice crystals are usually the result of either too much water in the mix or excessively long freezing time.

Is Tillamook ice cream vegan? ›

We do not make any dairy-free products. However, we do offer a fruit sorbet option at our ice cream counter at the Tillamook Creamery so that everyone can enjoy a delicious dessert!

What is ice cream without dairy called? ›

Sorbets. Sorbets are naturally lactose-free because they do not contain dairy. They're typically made from water and fruit juice or purée. Sherbets, on the other hand, will contain dairy in the form of dairy milk or cream, so be sure to inspect the label.

What is a substitute for coconut oil in vegan ice cream? ›

Blends of vegetable oils (60% to 80% coconut oil or palm kernel oil with 20% to 40% of a liquid oil such as sunflower oil, soybean oil, peanut oil, or olive oil) are often used in vegan ice cream production to obtain the optimum amount of solid fat.

What is the best stabilizer for ice cream? ›

Gums are the most powerful, flexible and the most useful stabilizers that are available to us. They suppress the growth of ice crystals better than any other ingredient. They can be used to alter the texture of ice cream in many different ways. They don't suppress other flavors, and are almost flavorless themselves.

What is the best thickener for homemade ice cream? ›

Tapioca Starch: Similar to cornstarch, tapioca starch can be used as a thickening agent to achieve a creamy texture in non-custard ice creams. Junket Tablets: Junket tablets, made with rennet, can also serve as a thickening agent for certain ice cream recipes.

What is the best non-dairy milk to make ice cream? ›

Cashew milk, like coconut, is a good base because of its higher fat content. But almond milk is still the No. 1 vegan milk choice among consumers, which makes it a popular choice for frozen desserts as well.

What kind of milk is in vegan ice cream? ›

Dairy-free frozen desserts typically substitute regular milk with plant-based milk such as almond, soy, coconut, or cashew milk, although there are some amazing brands (*cough, cough, Eclipse*) that take it even further.

What is the most creamy vegan milk? ›

Oat milk is perhaps the creamiest of all the plant milks. Its thick creamy texture means it's one of the closest plant-based milks to resemble dairy milk. Oat milk is quickly becoming a favorite non-dairy alternative to milk with popular brands like Oatly disrupting the traditional milk industry.

What milk does Ben and Jerry's non-dairy use? ›
